World famous chef brings culinary expertise to Hoi An
19:20 04/03/2009 ![]() Ms. Kath Townsend graduated from one of Australia’s top culinary schools in 1991, and has been on a path to professional success ever since. Her experience includes creating delicious dishes for visitors to the Opera House in Sydney, Australia – where she also served as executive chef – and working for one of the top resorts in the Indian Ocean's Maldive islands. The world-renowned Bathers' Pavilion at Balmoral Beach in Sydney and Italian restaurant Liago are other places where Townsend has delighted customers with her unique and tasty dishes. She has worked with popular Australian food writer, chef and restaurateur Bill Granger. Now based in Hoi An, Townsend will prepare mouth-watering dishes using a wide variety of high-quality ingredients from Vietnam. Her menu will include leeks and garlic with grapefruit juice and fresh, Vietnamese-style corn; and a selection of salads with shrimp, asparagus, and eggs cooked with cream and vinegar, just to name a few. “When first coming to Vietnam, you're impressed and overwhelmed by the fertile soil and delicious fresh fish,” Townsend remarked. “I will strive to make good use of all the ingredients available.
